By the way, most of these recipes are basic, with my own personal spins, so that both the experienced and not-so-experienced cook can prepare them. The recipes are written exactly the way that I make them, with suggestions and comments made to help you along. They are not always exact and leave room for a lot of creativity and experimentation, which is just how I cook. I can cook Southern or I can cook gourmet. Most of these recipes are simple comfort-type foods, made as healthier versions. And I have tried to make the recipes as user friendly as possible. Not everybody is a naturally good cook, so I leave all kinds of room for mistakes that will not cost the flavor or appearance of the dish. All recipes are printer friendly,too. I have tried to proof all the recipes but occasionally I may have missed a word or two. Nothing that will affect any of the recipes, though.
NOTE: In most of these recipes I have called for fresh ingredients. There is no reason why you can't substitute canned ingredients, if that is what you have access to, especially in the winter. The end result may not be as tasty or healthy but these recipes are good either way.
