OTHER FALL VARIETIES The following is a listing of many of the varieties we grow for late Summer and Fall. Many of these varieties will last in the garden until the killing cold of January/February. Once the weather gets colder, the Brassica's (kales, collards, cabbages, etc.) become sweeter and more tender as the sugars from their roots are drawn into the stems and leaves to act as "anti-freeze" for the plants.
